Kartoshnik with Cheese and Onions

Savory potato bake, a cake-like dish served as a delicious side.
Ingredients:
3 large potatoes, peeled and quartered
5eggs
0.25 cupheavy whipping cream
0.75 teaspoonsalt
0.75 cupshreddedsharp Cheddar cheese
0.75 cupshreddedSwiss cheese
0.5onion, chopped
3teaspoons baking powder
0.5 cupbutter, melted
0.5 cupsour cream
0.5 cupchoppedgreen onions
Instructions:
Boil potatoes in a pot until tender. Drain and mash.
Preheat the oven to 450 degrees F (230 degrees C.); grease a 9x9-inch oven-proof baking dish with vegetable spray, butter, or margarine.
In a bowl, beat eggs with whipping cream and salt until blended. Mix in mashed potatoes until well combined. Stir in cheeses, onions, and baking powder until smooth. Transfer the mixture to a baking dish and spread evenly.
Preheat oven to 450 degrees F (230 degrees C. Bake for 35 minutes until the top is a lovely light brown. Allow it to cool for 5 minutes before serving. (Note: Kartoshnik will rise while baking, then settle as it cools.)
Melt butter or margarine in a small pot.
Cut the Kartoshnik into 3x3-inch squares and generously top with melted butter or margarine, a dollop of sour cream or plain yogurt, and a sprinkle of green onions. Enjoy with your choice of low-fat sour cream for a lighter option.
