Ingredients:
  • 3 large potatoes, peeled and quartered
  • 5 eggs
  • 0.25 cup heavy whipping cream
  • 0.75 teaspoon salt
  • 0.75 cup shredded sharp Cheddar cheese
  • 0.75 cup shredded Swiss cheese
  • 0.5 onion, chopped
  • 3 teaspoons baking powder
  • 0.5 cup butter, melted
  • 0.5 cup sour cream
  • 0.5 cup chopped green onions
Instructions:
  • Boil potatoes in a pot until tender. Drain and mash.
  • Preheat the oven to 450 degrees F (230 degrees C.); grease a 9x9-inch oven-proof baking dish with vegetable spray, butter, or margarine.
  • In a bowl, beat eggs with whipping cream and salt until blended. Mix in mashed potatoes until well combined. Stir in cheeses, onions, and baking powder until smooth. Transfer the mixture to a baking dish and spread evenly.
  • Preheat oven to 450 degrees F (230 degrees C. Bake for 35 minutes until the top is a lovely light brown. Allow it to cool for 5 minutes before serving. (Note: Kartoshnik will rise while baking, then settle as it cools.)
  • Melt butter or margarine in a small pot.
  • Cut the Kartoshnik into 3x3-inch squares and generously top with melted butter or margarine, a dollop of sour cream or plain yogurt, and a sprinkle of green onions. Enjoy with your choice of low-fat sour cream for a lighter option.
