Simplify crab bisque into cream of crab soup in 45 minutes for a quick, rich and crab-filled bowl of goodness.
Ingredients:
  • 3 tablespoons all-purpose flour
  • 1 (1.25 ounce) envelope hollandaise sauce mix
  • 4 cups half-and-half, divided
  • 1 cup whipping cream
  • 3 tablespoons seafood seasoning (such as Old Bay®)
  • 0.5 teaspoon dry mustard
  • 0.25 teaspoon celery seed
  • 1 pound fresh crabmeat
  • 1 tablespoon cooking sherry
Instructions:
  • Combine flour and hollandaise sauce mix with 2 cups of half-and-half in a medium bowl, and blend until smooth.
  • In a medium, heavy saucepan over medium heat, melt butter. Slowly pour in hollandaise mixture, stirring constantly until it thickens. Add half-and-half, whipping cream, seafood seasoning, dry mustard, and celery seed. Bring to a gentle simmer, then reduce heat to low.
  • Gently stir in crabmeat and sherry until warmed through. Serve right away.
