Transform your sponge into an irresistible apple-infused delight for any occasion.
Ingredients:
6Granny Smith apples
107.50 gm caster sugar
2Whole Cloves
Icing sugar, for dusting
252.50 gm pure cream, whipped, to serve
240.00 gm custard, to serve
40g butter, softened
53.75 gm caster sugar
1egg, lightly beaten
4.40 gm vanilla essence
150.00 gm self-raising flour
Pinch of salt
169.95 gm milk
Instructions:
Preheat your oven to 180C (160C fan-forced).
Peel, quarter, and core the apples, then cut them into 2.5cm pieces. Place them in a large saucepan and add caster sugar, cloves, and 1 cup of water. Cook over medium heat, stirring occasionally, for 10-12 minutes until tender. Remove and discard cloves, then spoon the mixture into a 6-cup-capacity ovenproof dish.
Prepare Sponge: In a mixing bowl, cream together butter and sugar until fluffy. Gradually add in egg and vanilla, beating until thickened. Sift flour and salt into another bowl. Incorporate half of the flour mixture and half of the milk into the butter mixture. Gently fold in. Add the rest of the flour mixture and milk, and fold until combined. Pour over the warm apple mixture.
Bake uncovered at 350°F for 30 minutes or until the top turns golden and the sponge springs back when lightly pressed. Sprinkle with icing sugar before serving alongside fluffy whipped cream and custard.
