Colorful and flavorful stuffed tomatoes. Perfect side dish or snack.
Ingredients:
  • 1 (15 ounce) can garbanzo beans
  • 4 ounces trimmed arugula
  • 0.25 cup crumbled feta cheese
  • 5 tablespoons grated Parmesan cheese, divided
  • 0.25 cup olive oil
  • 4 tomatoes, tops and pulp removed
Instructions:
  • Preheat oven to 375°F (190°C) for the perfect bake.
  • Combine garbanzo beans, arugula, garlic, feta cheese, 4 tablespoons Parmesan cheese, and olive oil in a blender or food processor. Blend until smooth.
  • In an 8x8 inch baking dish, nestle the tomatoes and fill them with the savory garbanzo bean mixture. Finish by generously sprinkling the top with the remaining Parmesan cheese.
  • Bake in the preheated oven for 20 minutes until golden-brown and bubbly.
