Indulge in decadent meringue-topped puddings for a delightful sweet surprise.
Ingredients:
  • 160g (1 cup, lightly packed) brown sugar
  • 2 eggs, separated
  • 500ml (2 cups) milk
  • 30g butter, chopped
Instructions:
  • Preheat your oven to 200°C, then generously brush four 250ml (1-cup) capacity ovenproof dishes with melted butter for a rich and luxurious coating.
  • In a saucepan, mix brown sugar and flour and create a well in the center. In a large jug, whisk together egg yolks and milk. Slowly pour the milk mixture into the sugar mixture, whisking constantly until well combined. Heat the pan over medium heat, stirring constantly for 4 minutes until the mixture thickens and simmers. Take off the heat, add butter, and stir until combined. Divide the mixture among the prepared dishes.
  • Whip egg whites in a clean, dry bowl with an electric beater until soft peaks form. Gradually add caster sugar and beat until sugar dissolves and mixture is thick and glossy.
  • Divide the fluffy meringue into 4 parts and generously top each pudding. Bake for 8 minutes or until the meringue turns a light golden hue. Allow it to cool for 5 minutes before serving immediately.
