Transform extra Halloween candy bars into irresistible peanut butter oatmeal cookies - thin, crisp, and chewy.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1.25 cups extra crunchy peanut butter
  • 1 cup packed brown sugar
  • 0.5 cup shortening
  • 0.5 cup unsalted butter, softened
  • 2 eggs
  • 1.5 teaspoons vanilla extract
  • 18 fun size bars chocolate-covered crispy peanut butter candy (such as Butterfinger®), crushed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • Combine flour, oats, baking soda, and salt in a food processor and pulse until mixture is blended.
  • In a bowl, use an electric mixer to blend creamy peanut butter, brown sugar, white sugar, shortening, and unsalted butter. Mix in eggs one at a time until well-combined, then add vanilla.
  • Mix the flour mixture into the peanut butter mixture, then fold in the crushed peanut butter candy until just combined. Scoop 1-inch spoonfuls of dough onto baking sheets, spacing them 2 inches apart.
  • Bake cookies in the preheated oven until they turn a beautiful light brown, for around 15 minutes.
