Ingredients:
  • 113.76 gm olive oil
  • 125g parmesan cheese, grated
  • 2.00 garlic clove, crushed
  • 2 slices bread
  • 4 rashers bacon, rind removed, chopped
  • 2 chicken breasts, sliced
  • 1 large cos lettuce, leaves removed, washed, dried, shredded
  • 1 punnet cherry tomatoes, halved
  • 59.40 gm mayonnaise
  • 12.20 gm Worcestershire sauce
  • 5.00 gm caster sugar
Instructions:
  • Preheat your oven to 180°C.
  • Mix together 2 tablespoons of oil, half of the cheese, and garlic. Spread the mixture over the bread. Bake until crispy, about 5 to 7 minutes. Allow it to cool, then cut into cubes and set aside.
  • Prepare the dressing by combining all ingredients in a screw-top jar and shaking vigorously to blend.
  • Preheat a frying pan over medium-high heat. Cook bacon for 4 minutes, then set aside. In the same pan, add the remaining oil and chicken. Cook for 3 minutes.
  • In a large bowl, mix together croutons, bacon, chicken, lettuce, tomatoes, and dressing. Toss to combine. Sprinkle remaining cheese on top. Season to taste and serve.
