Keaton's Mini Chocolate Pancakes

Make scrumptious mini chocolate chip pancakes without the chocolate chips.
Ingredients:
  • 1 cup all-purpose flour
  • 0.25 cup white sugar
  • 2 tablespoons cocoa powder (such as Hershey's®)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk, at room temperature
  • 1 egg, at room temperature
  • 1 tablespoon vegetable oil
Instructions:
  • In a bowl, mix together flour, sugar, cocoa powder, baking powder, and salt. Create a well in the center of the dry ingredients. Pour in milk, egg, and oil, then stir until just combined.
  • Preheat a griddle over medium-high heat until water droplets bounce on the surface. Drop tablespoonfuls of batter onto the griddle for mini pancakes. Cook for 1 to 3 minutes until bubbles form and edges are dry. Flip and cook for an additional 1 to 3 minutes until browned. Repeat with the remaining batter.
