Spicy fried plantains from Ghana – coated in onions, ginger, cloves, and chile powder. A favorite snack!
Ingredients:
  • 1 quart vegetable oil for frying, or as needed
  • 1 small onion, cut into chunks
  • 3 tablespoons grated fresh ginger, or more to taste
  • 2 whole cloves, crushed
  • 5 ripe plantains, diced into 1/3-inch chunks
  • 3 tablespoons ground chile pepper
  • salt to taste
Instructions:
  • Warm the oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Blend the onion in a blender until smooth while the oil is heating, then mix in the ginger and cloves.
  • In a bowl, combine plantains with the flavorful onion mixture. Sprinkle in chile pepper and salt, tossing until plantains are fully coated.
  • Fry plantains in hot oil until beautifully golden on all sides, approximately 5 minutes. Transfer to a paper towel-lined plate to drain.
