Tropical grilled chicken marinated in soy, lemon, and coconut for a taste of the Marianas Islands. Enjoy it hot off the grill!
Ingredients:
6cutup chicken pieces
1cupsoy sauce
0.5 cupdistilled white vinegar
1teaspooncrushedgarlic
groundblack pepper to taste
0.25 cupfresh lemon juice
salt to taste
1cupunsweetened flaked coconut
0.33333298563957 cupchoppedgreen onions
1dashlemon pepper
0.125 cupchoppedgreen onionfor topping
Instructions:
Prepare the marinade by mixing soy sauce, vinegar, garlic, and ground black pepper until well combined. Refrigerate chicken in the marinade for 2 to 4 hours.
Take the chicken out of the refrigerator and discard the marinade. Broil or barbecue the chicken for 25 to 30 minutes until fully cooked. Once done, debone the chicken and chop the meat into small pieces.
In a medium bowl, combine diced chicken with lemon juice and salt. Add coconut, green onion, and lemon pepper spice. Mix well, garnish with more green onion, and serve.
