Tropical grilled chicken marinated in soy, lemon, and coconut for a taste of the Marianas Islands. Enjoy it hot off the grill!
Ingredients:
  • 6 cut up chicken pieces
  • 1 cup soy sauce
  • 0.5 cup distilled white vinegar
  • 1 teaspoon crushed garlic
  • ground black pepper to taste
  • 0.25 cup fresh lemon juice
  • salt to taste
  • 1 cup unsweetened flaked coconut
  • 0.33333298563957 cup chopped green onions
  • 1 dash lemon pepper
  • 0.125 cup chopped green onion for topping
Instructions:
  • Prepare the marinade by mixing soy sauce, vinegar, garlic, and ground black pepper until well combined. Refrigerate chicken in the marinade for 2 to 4 hours.
  • Take the chicken out of the refrigerator and discard the marinade. Broil or barbecue the chicken for 25 to 30 minutes until fully cooked. Once done, debone the chicken and chop the meat into small pieces.
  • In a medium bowl, combine diced chicken with lemon juice and salt. Add coconut, green onion, and lemon pepper spice. Mix well, garnish with more green onion, and serve.
