Zucchini slices coated in seasoned breadcrumbs, fried in olive oil, topped with melted mozzarella, and served with spaghetti sauce.
Ingredients:
  • 0.5 cup seasoned bread crumbs
  • 0.5 cup grated Parmesan cheese
  • 1 zucchini, cut into 1/4-inch slices
  • 1 cup shredded mozzarella cheese
  • 1 cup prepared spaghetti sauce, heated
Instructions:
  • Combine the seasoned bread crumbs, grated Parmesan cheese, and garlic salt in one shallow bowl. In another shallow bowl, whisk the eggs.
  • Warm the olive oil in a large skillet over medium heat until it shimmers, but is not smoking.
  • Coat zucchini slices in beaten egg, then breadcrumbs, and arrange in a skillet. Fry until golden brown (about 3 minutes), flip and cook until both sides are golden and cooked through. Sprinkle with mozzarella cheese and melt for 1 to 2 minutes more.
  • Spoon the warm spaghetti sauce onto plates, then layer on the crispy fried zucchini slices and gooey melted cheese for a delicious presentation.
