Kelly's Ham Jell-O Salad

Delicious cabbage and ham Jell-O salad with a creamy mayo and zesty mustard dressing.
Ingredients:
  • 1 (3 ounce) package lemon-flavored gelatin mix (such as Jell-O®)
  • 1 cup boiling water
  • 1 (8 ounce) can crushed pineapple in juice, drained and juice reserved
  • 1.5 tablespoons white wine vinegar
  • 0.5 cup cold water, or as needed
  • 0.5 cup mayonnaise
  • 2 teaspoons spicy brown mustard, or to taste
  • 1 cup finely chopped cabbage
  • 0.5 cup chopped celery
  • 1 cup chopped cooked ham
Instructions:
  • In a large bowl, dissolve the lemon gelatin in boiling water. In a measuring cup, combine the reserved pineapple juice and white wine vinegar, then add enough cold water to make 1 cup. Stir the water-juice mixture into the gelatin and refrigerate until cold and slightly thickened, approximately 30 minutes.
  • Combine mayonnaise and spicy brown mustard in a bowl, then whisk into cooled lemon gelatin until smooth. Gently fold in cabbage, ham, celery, and reserved pineapple before transferring mixture into a ring-shaped gelatin mold.
  • Refrigerate until perfectly firm, approximately 4 hours.
  • To unmold the gelatin, immerse the mold in hot water to release the edges. Place a plate over the mold, flip it, and remove the mold gently from the salad.
