Wholesome paleo breakfast bowl of turkey, veggies, and hot sauce - delicious!
Ingredients:
  • 1 pound ground turkey
  • 1 leek, minced
  • 1 red bell pepper, minced
  • 1 carrot, peeled and minced
  • 1 small zucchini, peeled and cut into small dice
  • 4 crimini mushrooms, minced
  • 1 pound baby kale, roughly chopped
  • salt and ground black pepper to taste
  • 1 dash Buffalo-style hot pepper sauce (such as Tabasco®)
Instructions:
  • Heat a large skillet over medium heat. Brown and crumble the turkey, stirring occasionally, for 5 to 7 minutes until cooked through. Drain any excess grease and transfer the turkey to a bowl.
  • In the same skillet, warm olive oil over medium heat. Sauté leek and red bell pepper until leek is soft, around 5 minutes. Add carrot and cook until softened, about 5 minutes. Mix in zucchini and crimini mushrooms; cook until mushrooms are tender, about 10 minutes. Add kale on top, stir until wilted, and cook for an additional 5 minutes.
  • Add the beautifully browned turkey back to the skillet, mix it with the vibrant vegetables, and generously season with hot sauce, salt, and pepper. Continue to cook and stir until the turkey is heated through, about 2 to 3 minutes.
