Whip up a hearty beef stew with tender veggies in under an hour using a pressure cooker.
Ingredients:
  • 2 tablespoons vegetable oil
  • 0.5 cup all-purpose flour
  • 1.25 pounds beef stew meat, cubed
  • salt and ground black pepper to taste
  • 1 large onion, chopped
  • 2 tablespoons white sugar
  • 2 cups water
  • 2 cubes beef bouillon
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 tablespoon dried parsley
  • 1 tablespoon dried basil
  • 4 potatoes, peeled and cut into 2-inch pieces
  • 2 cups peeled baby carrots
Instructions:
  • In a skillet over medium heat, warm vegetable oil. Place flour in a resealable bag, add half of the beef cubes, and shake to coat. Transfer coated beef to the pan, then repeat with the remaining beef. Season meat with salt and pepper to your liking.
  • Sauté onions with beef until meat is browned and onions are translucent, about 5 minutes. Sprinkle in sugar.
  • In a pressure cooker over medium-high heat, infuse water with beef bouillon, garlic, bay leaf, parsley, and basil until bouillon cubes dissolve. If available, insert the pressure cooker's rack. Layer potatoes, carrots, and meat mixture in the cooker, and season with salt and pepper. Secure the lid and bring the cooker up to full pressure.
  • Once the timer goes off, lower the heat to medium-low to keep the pressure. Cook for 8 minutes. Take the pot off the heat. Allow the pressure to release naturally for about 15 minutes, then carefully lift the lid. Serve the meat and veggies in a bowl and drizzle the flavorful pan juices on top.
