Delicious pumpkin cinnamon rolls with spiced swirl and decadent glaze, ideal for cozy fall or winter brunch.
Ingredients:
0.25 cupwarm water (100 degrees F/38 degrees C)
1 (.25 ounce) packageactive dry yeast
1 (15 ounce) canpumpkin puree
0.75 cupwhite sugar
1 (5 ounce) canevaporated milk
3tablespoons olive oil
1 large egg, beaten
2teaspoons pumpkin pie spice
5cups all-purpose flour, or more if needed
0.25 cupmeltedbutter
1.25 cups brown sugar, packed
2tablespoons pumpkin pie spice
1cupconfectioners' sugar
0.25 cupmilk
2tablespoons butter, melted
1 (3 ounce) packagecream cheese, softened
0.5 teaspoonvanilla extract
Instructions:
Prepare all ingredients.
In a large mixing bowl, combine warm water and yeast. Let sit until yeast forms a creamy foam, about 5 to 10 minutes.
Combine pumpkin puree, sugar, evaporated milk, olive oil, and egg with the yeast mixture until well mixed. Add pumpkin pie spice followed by about 5 cups of flour, or as needed, until a stiff dough forms.
Transfer the dough to a floured surface and knead for 8 minutes until smooth, slightly sticky, and elastic. Shape the dough into a ball and place it in an oiled bowl. Cover with a cloth and allow it to rise in a warm spot for approximately 45 minutes. (The dough will rise but not double in size.)
Preheat your oven to 350 degrees F (175 degrees C) and butter a 9x13-inch baking dish.
Flatten the dough and roll it out into a large 18x26-inch rectangle on a floured surface. Brush the surface with melted butter. For the filling, combine brown sugar and pumpkin pie spice in a small bowl, then sprinkle evenly over the buttered dough.
Roll the dough tightly over the filling into a log, making sure to pinch the seam closed. Then, use a serrated knife to slice the log into 12 even rolls.
Place the rolls in the baking dish, ensuring the cut sides are facing upwards. Bake in the preheated oven until the edges turn a light golden brown, for 30 to 40 minutes.
Prepare the glaze by whisking together confectioners' sugar, milk, butter, cream cheese, and vanilla until smooth and creamy.
Once out of the oven, generously spread the glaze over the pumpkin rolls and serve promptly to relish the delightful flavors!
