Kelsey's Favorite Stuffed Green Peppers

Cheesy baked stuffed green peppers with seasoned beef, rice, and onions, topped with melted mozzarella.
Ingredients:
  • 2 cups water
  • 1 cup uncooked white rice
  • 3 large green bell peppers, halved and seeded
  • 1.5 pounds lean ground beef
  • 1 onion, diced
  • garlic powder to taste
  • salt to taste
  • ground black pepper to taste
  • 1 (15 ounce) can tomato sauce
  • 2 cups finely shredded mozzarella cheese
Instructions:
  • Bring water to a boil in a saucepan, add rice, stir, cover, and simmer for 20 minutes.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C).
  • In a medium saucepan, cover green bell peppers with water and bring to a boil. Cook for 10 minutes. Remove from water and set in a 9x13 inch baking dish.
  • Over medium heat, brown the ground beef in a large saucepan until cooked through. Drain off any excess fat. Add in onion, cooked rice, garlic powder, salt, and pepper, stirring to combine. Pour in the tomato sauce and mix well. Allow the mixture to simmer for approximately 10 minutes. Remove from the heat and enjoy!
  • Distribute the savory meat mixture evenly onto the halved green peppers. Bake in the preheated oven for 45 minutes, or until the mixture develops a beautiful golden brown hue.
  • Top each stuffed pepper with a generous sprinkle of mozzarella cheese. Bake until the cheese is golden brown, approximately 5 to 10 minutes.
