Quick and flavorful stir-fried green beans with garlic and ginger in peanut oil.
Ingredients:
  • 0.5 cup peanut oil for frying
  • 1 pound fresh green beans, trimmed and cut into 2-inch pieces
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon minced garlic
  • 1.5 teaspoons dark soy sauce
  • 0.5 teaspoon white sugar
  • 1 pinch black pepper
Instructions:
  • In a hot wok or skillet, heat peanut oil until almost smoking. Add green beans and stir-fry until bright green with brown spots, about 2 minutes. Remove beans. Leave 2 tablespoons of oil in pan, then cook ginger and garlic until browned, about 2 minutes. Return green beans to the wok and add dark soy sauce, sugar, and black pepper. Stir-fry until hot, about 30 seconds. Enjoy!
