Delicious keto chorizo and cheese egg muffins with cilantro, ideal for a convenient breakfast or meal prep.
Ingredients:
  • 0.5 pound chorizo sausage
  • 0.5 white onion, diced
  • 6 eggs
  • 0.5 cup shredded pepper Jack cheese
  • 0.125 cup chopped fresh cilantro
Instructions:
  • Preheat the oven to 375°F (190°C) and generously spray a 6-cup muffin tin with baking spray that includes flour, like Pam®.
  • Heat a skillet over medium heat and cook chorizo and onion for about 10 minutes until golden brown and fragrant.
  • Whisk eggs with a splash of water in a bowl, then mix in shredded pepper Jack cheese and fresh cilantro.
  • Divide the egg mixture among the muffin tin cups, filling each one halfway. Top each with an even amount of chorizo mixture.
  • Bake in the preheated oven for 20-30 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
