Indulge in this low-carb lasagna casserole bursting with flavor from rich marinara and herbs. A perfect weeknight meal sans noodles.
Ingredients:
  • 1 pound lean ground beef
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon avocado oil
  • 0.5 cup minced onion
  • 1 teaspoon minced garlic
  • 1.5 cups marinara sauce
  • 0.5 cup ricotta cheese, drained
  • 0.5 cup shredded Parmesan cheese
  • 1.5 cups shredded mozzarella cheese
  • 1 large egg
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Place the ground beef in a skillet and generously season with salt and pepper. Sauté the beef over medium-high heat until it is beautifully browned and crumbled, which should take approximately 10 minutes. Drain the beef using a strainer and set it aside for later use.
  • Heat oil in the skillet over medium heat. Sauté onion until soft and translucent for 4 to 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds.
  • Add the beef back to the skillet and gently pour in the flavorful marinara sauce. Stir well to combine all the delicious flavors and then switch off the heat.
  • Combine the ricotta cheese, Parmesan cheese, 1/2 cup mozzarella cheese, and egg in a bowl and mix well.
  • Spread the meat mixture in an 8x8-inch oven-safe casserole dish. Top it with the cheese mixture and sprinkle the remaining 1 cup of mozzarella cheese on top.
  • Bake until the casserole is golden brown with melted cheese, about 20 to 25 minutes. Allow to rest for 10 minutes before serving.
