Spicy Bhutanese potato and cheese stew with chiles and garlic.
Ingredients:
2tablespoons vegetable oil, or as desired
4chile peppers, slit and coarsely chopped, or more to taste
6clovesgarlic, minced
1onion, diced
2potatoes, peeled and cubed
3cups water, or more if needed
0.5 teaspoonchile pepper powder
salt or to taste
1cupgratedfresh cheese
1pinchred pepper flakes, or to taste
Instructions:
In a pot over medium heat, sauté chile peppers and garlic in oil until golden and fragrant. Add onion and cook until translucent. Mix in the potatoes until coated with oil.
Cover the potato mixture with water and season with chili powder and salt. Boil, then simmer until potatoes are tender, adjusting water as needed to keep the gravy thick, for 10 to 15 minutes.
Lower the heat and scatter fresh cheese over the gravy, gently stirring until melted and evenly distributed, approximately 5 minutes. Finish by decorating the dish with red pepper flakes.
