Irresistible Key lime cheesecake with a perfect balance of sweet, tart, and creamy flavors. A must-have dessert to enjoy and impress!
Ingredients:
  • 1.5 cups graham cracker crumbs
  • 6 tablespoons butter, melted
  • 24 ounces cream cheese, softened
  • 1 tablespoon grated lime zest
  • 1 tablespoon cornstarch
  • 3 large eggs
  • 0.66666668653488 cup key lime juice
Instructions:
  • Mix graham cracker crumbs with butter, press into a 9-inch springform pan's bottom and slightly up the sides, then chill as you make the filling.
  • Preheat the oven to 300 degrees F (150 degrees C). Place a shallow pan filled halfway with hot water on the bottom rack to prevent cracking.
  • In a large bowl, use an electric mixer to blend cream cheese, sugar, lime zest, and cornstarch until smooth and fluffy. Add eggs one at a time, mixing just until smooth. Incorporate Key lime juice on low speed. Finish mixing by hand to avoid overbeating, which may cause cracking. Pour the batter into the prepared crust.
  • Bake in the oven until firm, about 55 to 65 minutes.
  • After baking, allow the cheesecake to cool in the oven with the door ajar for 30 minutes before removing.
  • Chill the cheesecake for at least 8 hours, or up to 3 days for best results.
