Mouthwatering Middle Eastern lamb dish with bulgur, spices, and pine nuts, paired perfectly with tabouli, salad, rice pilaf, and warm pita bread.
Ingredients:
  • 0.5 cup bulgur
  • 0.5 cup hot water
  • 0.5 teaspoon dried mint
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground black pepper
  • 0.125 teaspoon ground cinnamon
  • 1 onion, minced
  • 2 tablespoons chopped fresh parsley
  • 1 pound ground lamb
  • 2 tablespoons pine nuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease an 8-inch square baking dish.
  • Allow the bulgur to soak in hot water until it expands and cools, approximately 10 minutes. Combine the soaked bulgur, mint, allspice, pepper, cinnamon, salt, onion, parsley, and lamb in a food processor. Process for about 1 minute until fully combined. Spread half of the lamb mixture evenly in a baking dish to form a large patty. Sprinkle pine nuts over the meat layer, then top with the remaining lamb mixture, pressing down gently. Cut the assembled kibbee into 1 1/2 inch squares.
  • Roast in the preheated oven until the lamb reaches an internal temperature of 160 degrees F (70 degrees C), about 30 to 35 minutes, ensuring it's no longer pink in the middle.
