Spicy chicken stir fry with colorful veggies over chili rice for a flavorful kick in every bite.
Ingredients:
  • 4 cups water
  • 0.25 teaspoon salt
  • 2 tablespoons butter
  • 3 dried red chiles, broken into several pieces
  • 2 cups uncooked white rice
  • 1 tablespoon sesame oil
  • 2 garlic cloves, minced
  • 2 tablespoons soy sauce, divided
  • 1 skinless, boneless chicken breast half, diced
  • 1 teaspoon dried basil
  • 1 teaspoon ground white pepper
  • 0.5 teaspoon dry ground mustard
  • 1 pinch ground tumeric
  • 1 tablespoon butter
  • 1.5 cups broccoli florets
  • 1 cup diced green bell pepper
  • 1 cup diced red bell pepper
  • 0.5 cup diced onion
  • 1 teaspoon lemon juice
Instructions:
  • In a pot over medium-high heat, merge water, salt, 2 tablespoons of butter, and red chili peppers, then bring to a boil.
  • Mix in the rice, cover the pot, and reduce the heat to medium. Allow the rice to cook until tender, stirring occasionally, for 15 to 20 minutes.
  • Heat the fragrant sesame oil in a skillet or wok over medium heat. Sauté the garlic until aromatic, around 1 minute, then add half of the soy sauce.
  • Sauté chicken, basil, white pepper, dry mustard, turmeric, and garlic until chicken is golden, cooked through, and juices run clear, about 5 to 8 minutes.
  • Blend in the rest of the soy sauce into the chicken mixture.
  • Saute 1 tablespoon butter with broccoli, green pepper, red pepper, and onion in a separate skillet until tender, about 10 minutes. Mix in lemon juice.
  • Combine the chicken and vegetables for a delicious mix.
