Spicy Mexican chicken salad: Ideal for BBQs or quick dinners.
Ingredients:
  • 2.5 cups shredded cooked chicken meat
  • 0.5 cup julienned carrots
  • 0.25 cup julienned red bell pepper
  • 0.25 cup julienned jicama
  • 0.25 cup julienned red onion
  • 2 (11 ounce) cans whole kernel corn, drained
  • 1 cup cherry tomatoes, halved
  • 3 avocados - peeled, pitted, and chopped
  • 2 tablespoons chopped fresh cilantro
  • 0.5 cup sour cream
  • 0.66666668653488 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon pepper
  • 1 (1.25 ounce) package taco seasoning
  • 1 teaspoon hot pepper sauce
Instructions:
  • Combine chicken, carrots, red bell pepper, jicama, red onion, corn, cherry tomatoes, avocados, and cilantro in a large bowl, gently mixing everything together.
  • Combine sour cream, mayonnaise, lemon juice, cumin, salt, pepper, taco seasoning, and hot sauce in a bowl. Drizzle over salad, toss well to coat. Chill in the fridge for at least 1 hour before serving.
