Kim's Eggnog Cheesecake

Decadent eggnog-infused cheesecake with a perfect balance of flavors, irresistibly smooth and delicious.
Ingredients:
  • 1 cup graham cracker crumbs
  • 3 tablespoons white sugar
  • 3 tablespoons butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 4 eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract
Instructions:
  • Grease a 9-inch springform pan with a touch of oil. Mix graham cracker crumbs, 3 tablespoons of white sugar, and butter in a bowl until evenly moistened. Press the mixture into the bottom of the pan.
  • Using an electric mixer, blend together cream cheese and 1 cup sugar until smooth. Add flour and beat until combined. Mix in eggs on low speed. Pour in eggnog and vanilla, and beat until just blended. Occasionally scrape the bottom of the bowl. Pour mixture over the crust.
  • Place a shallow dish filled with hot water on the bottom rack of the oven, then position the cheesecake on the middle rack. Set the oven temperature to 200 degrees F (95 degrees C without preheating the oven.
  • Bake the cheesecake until the center is set, approximately 3 hours and 15 minutes. Turn off the oven and let the cheesecake cool inside for about 3 hours. Refrigerate overnight before serving.
