Create irresistible pumpkin muffins using applesauce, canned pumpkin puree, and egg whites.
Ingredients:
  • 3 cups all-purpose flour
  • 1.25 cups white sugar
  • 1 (15 ounce) can pumpkin puree
  • 4 egg whites
  • 0.5 cup applesauce
  • 1.5 teaspoons salt
  • 1 teaspoon ground nutmeg
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground allspice, or more to taste
  • 0.25 teaspoon ground ginger
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a mini-muffin pan by greasing it or lining with paper muffin liners.
  • Combine all the ingredients in a large bowl until just moistened and then pour the mixture into the prepared muffin cups.
  • Bake in the preheated oven for about 15 minutes until golden and the tops spring back when gently pressed. Let cool completely on a wire rack before serving.
