Easy sweet and sour chicken with colorful veggies and juicy pineapple in a zesty sauce.
Ingredients:
  • 1 pound chicken, cut into cubes
  • 0.25 cup soy sauce
  • 2 tablespoons vegetable oil
  • 0.5 cup apple cider vinegar
  • 0.75 cup white sugar
  • 0.5 cup water
  • 3 tablespoons cornstarch
  • 1 (8 ounce) can pineapple chunks - drained with juice reserved
  • 0.33333334326744 cup tomato soup
  • 1 carrot, thinly sliced
  • 0.5 onion, cut into chunks
  • 0.5 green bell pepper, sliced
Instructions:
  • Allow the chicken cubes to luxuriate in a bath of flavorsome soy sauce in a bowl for 30 minutes.
  • Heat up some vegetable oil in a skillet over medium-high heat.
  • Cook and stir chicken in the skillet until no longer pink in the center and juices run clear after removing from soy sauce.
  • Set the chicken aside after removing it from the skillet.
  • Combine vinegar, sugar, and 1/2 cup water in a skillet over medium heat until the sugar completely dissolves.
  • In a bowl, mix cornstarch with 1/2 cup water, then stir it into the vinegar mixture.
  • Gently mix the ingredients and reduce heat to medium-low.
  • Combine the pineapple juice and tomato soup with the vinegar mixture, then simmer for 5 minutes.
  • Add the vibrant combination of carrots, onion, and bell pepper and gently mix them in.
  • Simmer for 20-25 minutes until the sauce turns a beautiful reddish-yellow hue and the vegetables are tender.
  • Combine the pineapple chunks and cooked chicken with the sauce, and warm through for 2 to 4 minutes.
