Crispy Okra and Potato dish with seasoned cornmeal, fried to perfection - Kingombo Patatas, a flavorful African side.
Ingredients:
  • 0.5 cup cornmeal
  • salt and ground black pepper to taste
  • 2 large potatoes, cut into 1/2-inch cubes
  • 1 pound fresh okra, trimmed and cut into 1/2-inch pieces
  • 1 white onion, finely chopped
  • 0.5 cup cooking oil
Instructions:
  • Combine cornmeal, salt, and pepper in a large resealable plastic bag, then toss in potatoes, okra, and onion. Seal the bag and shake until the vegetables are evenly coated with the cornmeal mixture.
  • 1. Heat cooking oil in a large skillet over medium heat until shimmering but not smoking. Add vegetables and cook until potatoes are tender, and okra and onion are browned, about 10-12 minutes. Using a slotted spoon, transfer cooked vegetables to a paper towel-lined plate.
