Flavorful and healthy Indian-inspired dish.
Ingredients:
  • 18.40 gm vegetable oil
  • 250.00 ml dried red lentils, rinsed, drained
  • 400.00 gm Basmati rice
  • 7 whole cloves
  • 5 cardamom pods, lightly crushed
  • 1020.00 gm chicken style liquid stock
  • 250.00 ml frozen peas
  • 1 tsp garam masala
  • 82.50 ml fried shallots
Instructions:
  • In a large, heavy-based saucepan over medium heat, heat oil. Add lentils and rice and cook, stirring, for 1 minute until coated with oil. Add cloves, cardamom, stock, and a pinch of salt. Bring to a boil over high heat, then reduce to low and cook covered for 10 minutes until almost all liquid is absorbed. Stir in peas and cook covered for an additional 5 minutes until rice and peas are tender.
  • Sprinkle in fragrant garam masala, gently stirring to blend flavors. Take off heat and garnish with crispy fried shallots before presenting for a delightful meal.
