Pumpkin coffee cake with caramelized walnut topping - a delicious fall indulgence.
Ingredients:
  • cooking spray
  • 1 (16 ounce) package pound cake mix
  • 0.75 cup pumpkin puree
  • 6 tablespoons water
  • 2 teaspoons pumpkin pie spice
  • 0.5 cup packed brown sugar
  • 0.5 cup chopped walnuts
  • 0.25 cup all-purpose flour
  • 1 tablespoon butter, melted
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9-inch baking pan with cooking spray.
  • In a large bowl, blend together pound cake mix, pumpkin puree, water, eggs, pumpkin pie spice, and baking soda using an electric mixer on low speed until the mixture is smooth. Transfer the batter to the prepared baking pan.
  • Mix brown sugar, walnuts, flour, and butter in a small bowl until crumbly; spread over the batter in the pan.
  • Bake in the preheated oven for around 30 minutes, or until a toothpick inserted in the center comes out clean.
