Elevate your Nowruz celebration with flavorful herbs, eggs, and spices in this delicious kookoo sabzi frittata.
Ingredients:
  • 1 teaspoon dried tarragon
  • 0.33333334326744 cup fresh barberries
  • 1 bunch Swiss chard, stems removed
  • 1 bunch fresh parsley, tough stems trimmed
  • 1 bunch fresh cilantro, tough stems trimmed
  • 1 bunch fresh dill, tough stems trimmed
  • 1 bunch green onions, finely chopped
  • 0.5 cup walnuts, roughly chopped
  • 1 clove garlic, chopped
  • 1.5 teaspoons kosher salt (such as Diamond Crystal®)
  • 1 teaspoon dried fenugreek leaves
  • 0.5 teaspoon ground turmeric
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground saffron
  • 0.25 teaspoon ground Damask rose petals
  • 0.25 teaspoon ground black pepper
  • 6 large eggs, or more as needed
  • 0.33333334326744 cup olive oil
  • 2 tablespoons olive oil
Instructions:
  • Place barberries in a bowl and cover with water. Let them soak for 10 minutes, then drain.
  • Finely chop Swiss chard, parsley, cilantro, and dill in batches in a food processor until well minced but not pureed. Transfer to a big bowl and add barberries, walnuts, minced garlic, salt, fenugreek, tarragon, turmeric, cinnamon, saffron, crushed rose petals, and black pepper. Mix until combined. Incorporate 6 eggs and stir well; the mixture should resemble thick yogurt or soft serve ice cream. If it's too thick, gradually add more eggs and mix until desired consistency is achieved.
  • In a large nonstick frying pan, warm 1/3 cup of olive oil over medium heat. Spread the batter evenly in the pan, cover with a lid, and cook until oil bubbles along the sides for about 3 minutes. Continue to cook covered until the kookoo starts to set and the bottom is browned, which should take about 12 to 15 minutes.
  • Cut the kookoo into 4 large pieces evenly. Using a wide spatula, flip each piece over one at a time. Drizzle 2 tablespoons of oil in between the cuts, then reduce the heat to medium-low. Cook uncovered until cooked through, about 10 minutes. Cut into desired pieces and serve warm or at room temperature.
