Quick and flavorful prawn korma served with rice and snow peas, ready in under 30 minutes with simple ingredients.
Ingredients:
  • 315g (1 1/2 cups) jasmati rice (Riviana brand)
  • 18.20 gm peanut oil
  • 500g medium green prawns, peeled with tails left intact, deveined
  • 1 medium red capsicum, quartered, deseeded, cut into strips
  • 1 430g jar creamy korma simmer sauce (Sharwood's brand)
  • 250mls (1 cup) water
  • 200g snow peas, topped, diagonally sliced
  • 1 bunch coriander, leaves picked, washed, chopped
Instructions:
  • Prepare a flavorful batch of rice in a spacious saucepan utilizing the absorption method, as per the instructions on the packet, until it reaches the desired tenderness.
  • Heat oil in a large wok or saucepan over high heat. Stir-fry prawns and capsicum for 2-3 minutes until prawns change color. Remove from the wok.
  • Pour in the simmer sauce and water, bringing it to a boil. Lower the heat to medium and simmer uncovered for 5 minutes. Toss in the snow peas and cook for an additional 2 minutes. Finally, reintroduce the prawns and capsicum to the wok, sprinkle in the coriander, and cook for 1 minute until the prawns are heated through.
  • Plate the flavorful korma prawns with a side of fragrant rice.
