Greek Christmas shortbread cookies - delicately powdered and perfect for celebrations.
Ingredients:
  • 250g butter, softened
  • 375.00 gm pure icing sugar
  • 8.80 gm vanilla extract
  • 1 orange, rind finely grated
  • 1 egg, at room temperature
  • 625.00 ml plain flour
  • 50.00 gm almond meal (ground almonds)
Instructions:
  • Heat your oven to 160°C. Prepare 2 flat baking trays by lining them with baking paper.
  • In an electric mixer, whip together butter, 1 cup icing sugar, vanilla, and orange zest until light and fluffy. Mix in the egg until fully incorporated. Gradually sift in flour and baking powder, then add almond meal. Stir until dough forms.
  • Form 8cm-long sausage shapes using 1 tablespoon of dough for each biscuit. Shape into crescent shapes and arrange on baking trays with enough space between them. Bake for 20 minutes until they turn light golden. Let them rest on the trays for 5 minutes to firm up.
  • In a bowl, place the remaining sugar. Coat each warm biscuit in the sugar, then place them on a wire rack to cool. Once cool, sift any leftover icing sugar over the biscuits.
