Cathy's velvety fruit slice puts a tasty spin on classic mince pies.
Ingredients:
  • 225g (1 1/2 cups) plain flour
  • 150g (1 cup) self-raising flour
  • 185g unsalted butter, chopped, at room temperature
  • 100g (1/2 cup) caster sugar
  • 1 egg
  • 26.80 gm golden syrup
  • 1 tsp finely grated orange rind
  • 410g btl fruit mince
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 200°C and prepare a 16 x 26cm slice pan by lining it with baking paper, ensuring it is 3cm deep.
  • In a food processor, blend flour, butter, sugar, egg, golden syrup, and orange rind until dough forms. Transfer dough to a floured surface and knead until smooth. Divide dough into 2 portions. Press one portion into the lined pan and use a spoon to smooth the surface.
  • Spread the fruit mince over the base. Roll out the remaining dough on a lightly floured surface until 4mm thick. Cut it into 1.5cm-wide strips, then arrange half of them diagonally at 2cm intervals across the top of the slice. Repeat this step with the remaining strips, trimming any excess dough.
  • Bake for 10 minutes until light golden. Reduce oven to 180°C, cover with foil, and bake for an additional 15-20 minutes until golden and firm. Allow to cool completely in the pan.
  • Cut the slice evenly and sprinkle with icing sugar for a sweet finish.
