Irresistible bacon-ranch potato salad with red potatoes, crispy bacon, Cheddar, and green onions - a summer favorite!
Ingredients:
  • 2 pounds red potatoes, cut into bite-size pieces
  • 1 (16 ounce) container sour cream
  • 1 (1 ounce) package ranch dressing mix
  • 1.25 cups cooked bacon, crumbled
  • 1.5 cups shredded Cheddar cheese
  • 2 bunches green onions, thinly sliced
Instructions:
  • In a large pot, cover potatoes with salted water and bring to a boil over high heat. Reduce to medium-low, cover, and simmer until tender for about 20 minutes. Drain and cool quickly under cold water.
  • In a small bowl, mix sour cream and ranch dressing until smooth. In a large bowl, combine potatoes, bacon, Cheddar cheese, and green onions. Stir in the sour cream mixture until everything is well coated. Chill in the fridge for 2 hours before serving.
