Zesty corn salad with a mix of veggies and tangy dressing, perfect for summer cookouts.
Ingredients:
  • 2 (16 ounce) packages frozen corn kernels, thawed
  • 2 small zucchini, diced
  • 1 (2 ounce) jar chopped pimento peppers
  • 0.5 cup chopped red onion
  • 1 (4 ounce) can chopped green chile peppers, drained
  • 0.66666668653488 cup olive oil
  • 0.25 cup fresh lime juice
  • 2 tablespoons cider vinegar
  • 2 teaspoons ground cumin
  • 1.5 teaspoons salt
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon garlic salt
Instructions:
  • Combine the corn, zucchini, pimentos, red onion, and green chile peppers in a large bowl.
  • Combine olive oil, lime juice, cider vinegar, cumin, salt, pepper, and garlic salt in a sealed jar. Shake vigorously to mix.
  • Drizzle the oil mixture over the corn, and gently combine to coat everything evenly. Cover and refrigerate for at least 3 hours before serving.
