Kristin's Turkey Butternut Squash Casserole

Easy weeknight casserole with ground turkey and butternut squash.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound lean ground turkey
  • 2 cups cubed butternut squash
  • 1 medium onion, chopped
  • 1 cup 1% milk
  • 1 cup shredded mozzarella cheese
  • 0.25 cup butter, melted
  • 2 large eggs
  • 0.25 teaspoon ground black pepper
  • 1 cup crushed buttery round crackers (such as Ritz®)
Instructions:
  • Preheat the oven to 375°F (190°C) and lightly grease a 9-inch square baking dish.
  • In a skillet over medium heat, sizzle some olive oil. Toss in the ground turkey and sauté until golden and crumbly, about 5 to 10 minutes. Introduce the butternut squash and onion, and stir until the squash is just softened, another 5 to 10 minutes. Remove any extra grease from the skillet before proceeding.
  • In a bowl, combine milk, mozzarella cheese, melted butter, eggs, salt, and pepper, whisking until smooth. Slowly fold the milk mixture into the turkey mixture. Pour everything into the baking dish and top with crushed crackers.
  • Bake in the oven until golden brown and bubbling, about 25-30 minutes.
