Mild yet flavorful kung pao chicken variation, nut-free for all to enjoy.
Ingredients:
  • 0.5 cup soy sauce
  • 0.5 cup lemon juice
  • 1 tablespoon ground ginger
  • 1 tablespoon minced garlic
  • 4 chicken breast halves, cubed
  • 1 tablespoon vegetable oil
  • 1 bunch green onions
  • 1 green bell pepper, chopped
  • 2 teaspoons cornstarch
Instructions:
  • In a large glass bowl, mix together soy sauce, lemon juice, ginger, and garlic. Add cubed chicken, cover, and chill in the refrigerator for 30 minutes.
  • In a large skillet over medium heat, gently place chicken in the hot oil using a slotted spoon while leaving the marinade in the bowl. Cook until chicken is cooked through and the juices run clear, about 5 minutes. Then, transfer the chicken to a plate.
  • Toss in the vibrant green onions and bell pepper into the sizzling skillet. Sauté over medium-high heat for 1 to 2 minutes. Reintroduce the succulent chicken back into the mix.
  • Whisk cornstarch into the marinade, then pour over chicken and vegetables in skillet. Increase heat to high and stir constantly until sauce thickens, approximately 5 minutes.
