Kung Pao Pork over Sesame Noodles

Quick and easy homemade Asian dinner ready in 30 minutes!
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 bag (1 lb) broccoli slaw mix
  • 1 lb boneless pork loin, cut into 1/2-inch pieces
  • 1 medium red bell pepper, cut into 1/2-inch pieces
  • 1/2 cup water
  • 1/2 cup Szechuan spicy stir-fry sauce
  • 1 tablespoon honey
  • 1 package (7 oz) rice stick noodles
  • 2 teaspoons sesame or vegetable oil
  • 2 tablespoons salted peanuts
Instructions:
  • Heat a 12-inch nonstick skillet over medium-high heat. Add vegetable oil and swirl to coat the bottom of the skillet. Cook the broccoli slaw, stirring often, for 2 to 3 minutes until crisp-tender. Remove the broccoli slaw from the skillet and keep warm.
  • In the same skillet, sear the pork over medium-high heat for 5 to 6 minutes until beautifully browned. Add bell pepper and water, cover, and cook for 3 to 4 minutes until the pork is tender. Finish by adding stir-fry sauce and honey, then simmer uncovered for 1 to 2 minutes.
  • While heating up 3 quarts of water to a boil, add noodles and cook for 3 minutes. Then, drain the noodles.
  • Gently mix noodles with fragrant sesame oil. Serve noodles in individual bowls. Add flavorful broccoli slaw and seasoned pork on top. Finish with a sprinkle of crunchy peanuts.
