Tasty Filipino street food: Quail eggs dipped in orange batter, deep-fried, and served with sweet-sour sauce.
Ingredients:
12quail eggs
0.25 cuprice vinegar
0.25 cupketchup
0.25 cupbrown sugar
2teaspoons soy sauce
0.5 cupwater
1dropyellow food coloring
1dropred food coloring
1cupall-purpose flour
salt and freshly ground black pepper to taste

0.25 cupcornstarch

Instructions:
In a saucepan, cover eggs with water and bring to a boil. Reduce heat, cover, and cook for 4 minutes. Remove from heat, let stand covered for 2 minutes. Rinse eggs in cold water, cool to room temperature, and peel.
In a saucepan, mix rice vinegar, ketchup, brown sugar, and soy sauce. Cook over medium heat, stirring until the sugar dissolves, for about 5 minutes. Allow it to cool.
Achieve a vibrant orange hue by incorporating red and yellow food coloring into the water. Mix flour, salt, and pepper in a bowl, then pour in the colored water and stir until smooth.
Warm the oil in a wok until it reaches 375 degrees F (190 degrees C).
Roll eggs in cornstarch, coat lightly, remove excess. Dip in orange batter to fully cover. Skewer eggs and carefully drop into hot oil. Fry until crispy, about 2 minutes each side. Remove with slotted spoon, drain on paper towels.
