Lactose-Free Strawberry Flans

"Delicious panna cotta made with soy milk and lactose-free yogurt."
Ingredients:
  • 1 cup sugar
  • 4 eggs
  • 1 1/2 cups original-flavored soymilk
  • 2 containers (6 oz each) Yoplait® Lactose Free strawberry yogurt
  • Fresh strawberry slices
Instructions:
  • Preheat the oven to 350°F. In a 10-inch skillet over medium-high heat, melt the sugar until it turns into a light caramel color while stirring frequently. Pour the caramel into 8 (6-oz) custard cups and place them on a cooling rack to cool.
  • In a medium bowl, whisk together eggs until well blended, then mix in the soymilk and yogurt. Pour this mixture over the sugar mixture in custard cups and place the cups in two 13x9-inch pans. Pour very hot water carefully into each pan until it reaches halfway up the sides of the custard cups.
  • Bake until a knife inserted in the center comes out clean, about 50 to 60 minutes. Gently remove cups from the water bath and let them cool for 30 minutes. Then, cover and refrigerate for 2 to 3 hours. When ready to serve, unmold by running a knife around the edge of the custard cup, flipping it onto a serving plate, and topping with strawberries.
