Whip up delicate oatmeal lace cookies that are perfect on their own or paired with ice cream. You can also roll them into tubes and dip them in chocolate for an extra indulgent treat.
Ingredients:
  • 1 cup quick cooking oats
  • 0.25 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 cup butter, softened
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C). Line baking sheets with foil and generously spray with non-stick cooking spray.
  • Combine oats, flour, salt, and baking powder in a medium bowl. In a large bowl, cream sugar and butter until fluffy, then beat in egg and vanilla. Gradually mix in the flour and oat mixture until just combined. Drop teaspoonfuls of dough onto baking sheets, spaced 2 1/2 inches apart.
  • Bake at 325 degrees F (165 degrees C) for 10 to 12 minutes until edges are golden. Let cool and easily peel cookies off. Respray baking sheets with non-stick cooking spray between batches.
