Budget-friendly bake with lamb mince, Mediterranean beans, eggplant, and potato - a tasty crowd-pleaser!
Ingredients:
  • Lemon wedges, to serve
  • 400g eggplant
  • 60 ml (1/4 cup) olive oil
  • 1 onion, chopped
  • 500g lamb mince
  • 1.25 gm ground cinnamon
  • 400g can chopped tomatoes
  • 420g can Heinz® Beanz Creationz™ Mediterranean Style Beanz
  • 2 potatoes, peeled, thickly sliced
  • 200g (2 cups) pizza cheese
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Prepare 2 baking trays with baking paper. Arrange eggplant slices on trays, drizzle with 2 tablespoons of oil, and season generously. Bake for 10-15 minutes until tender.
  • Heat the remaining oil in a pan over medium heat. Sauté the onion for 5 minutes until softened. Increase the heat to high and add the lamb mince. Cook while breaking up any lumps for 5 minutes until browned. Stir in the cumin and cinnamon for 30 seconds until fragrant. Add the tomatoes and Beanz Creationz™. Reduce the heat to low, cover, and simmer for 10 minutes.
  • Microwave potatoes on high power for 5 minutes until soft.
  • 1. Grease an 8-cup baking dish, then layer potatoes on the bottom. 2. Add a layer of eggplant followed by half of the mince mixture. 3. Repeat the layers with eggplant and mince. 4. Sprinkle cheese over the top and bake for 20 minutes until golden. 5. Serve with lemon wedges.
