Lamb, spinach and tomato rissoles

Kids will love these fun lamb, spinach, and tomato rissoles.
Ingredients:
  • 500g lean lamb mince
  • 1 tsp dried mixed herbs
  • 2 garlic cloves, crushed
  • 50g baby spinach, finely shredded
  • 2 small tomatoes, finely chopped
  • 62.50 ml chopped fresh basil
  • 2 green onions, finely chopped
  • 18.20 gm olive oil
  • Tomato sauce, to serve
  • Steamed rice, to serve
  • Steamed vegetables, to serve
Instructions:
  • In a bowl, mix together mince, herbs, garlic, spinach, tomato, basil, and onion. Season with salt. Shape the mixture into 12 rissoles using a ¼ cup per rissole. Place the rissoles on a plate. Preheat the oven to 180°C/160°C fan-forced and line a baking tray with baking paper.
  • Warm up oil in a frying pan. Fry rissoles in batches for 2 minutes per side or until golden brown. Place on a lined tray. Bake for 15 minutes or until fully cooked. Serve with sauce, rice, and vegetables.
