Lamb and apricot pilaf

Spicy pilaf featuring heavenly combination of dried fruit and lamb.
Ingredients:
  • 36.40 gm olive oil
  • 500g diced lamb
  • 1 large brown onion, chopped
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 chicken style stock cube, crumbled
  • 625.00 gm water
  • 300.00 gm basmati rice, rinsed
  • 82.50 ml currants
  • 125.00 ml dried apricots, halved
  • 62.50 ml flat-leaf parsley, chopped
Instructions:
  • In a large saucepan over medium-high heat, heat 3 teaspoons of oil until shimmering. Add half of the lamb and cook for 3 minutes until golden brown. Transfer to a plate and sear the remaining lamb in the same way with more oil.
  • In a saucepan, warm the remaining oil over medium heat. Add the onion, garlic, and spices. Sauté and stir for about 4 minutes until they are soft.
  • In a saucepan, combine lamb, stock cube, and 1/2 cup water. Cover and cook for 20 minutes, stirring occasionally. Add remaining water, rice, and dried fruit. Cover and cook for another 10 minutes. Remove from heat and let it stand covered for 10 minutes. Stir in parsley before serving.
