Grilled lamb with orange slices and creamy cheese salad. Perfect for summer gatherings!
Ingredients:
  • 500g Lamb Leg Steaks
  • 21.00 gm orange juice
  • 23.40 gm wholegrain mustard
  • 120g pkt Baby Rocket
  • 125.00 ml fresh mint leaves
  • 1 small red onion, thinly sliced
  • 2 oranges, peeled, thinly sliced
  • 200g fresh mozzarella or bocconcini, torn
Instructions:
  • Mix the lamb with zesty orange juice, tangy mustard, and aromatic garlic in a shallow glass or ceramic bowl.
  • Preheat a barbecue grill or chargrill on high heat. Grill the lamb for 3 minutes on each side or until cooked to your preference. Transfer to a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Slice the lamb thinly. In a large bowl, mix together rocket, mint, onion, orange slices, mozzarella or bocconcini, and lamb. In a small bowl, combine vinegar and oil, then drizzle over the salad.
