Whip up flavorful lamb kofta in just 30 minutes for a satisfying meal.
Ingredients:
  • 1 small onion
  • 1 large clove garlic
  • 50g pistachios
  • 1/2 bunch mint
  • 1/2 bunch flat-leaf parsley
  • 500g minced lamb
  • 2.50 gm ground cinnamon
  • 1/2 tsp ground cardamom
  • 1.25 gm sweet paprika, plus extra, to serve
  • 44.40 gm tomato paste
  • 50g currants
  • 250g packet basmati rice
  • Olive oil, to brush
  • 1 lemon
  • 70g (1/4 cup) tahini
  • 1 loaf Turkish bread
  • 200g baby roma tomatoes
Instructions:
  • Peel and quarter the onion and garlic, then pulse with pistachios in a food processor until roughly chopped. Remove herb leaves from stems, add half to the onion mixture, and process until finely chopped. Add minced meat, spices, tomato paste, and 1 teaspoon of salt, then pulse to combine. Transfer to a bowl and mix in currants and half of the rice (save the rest for later use). Shape into 12 7cm-long oval koftas and brush generously with oil.
  • Preheat a frying pan over medium heat and cook the koftas, turning occasionally, for about 8 minutes until fully cooked.
  • Squeeze lemon juice into a bowl, then mix with tahini and 2 tablespoons of cold water until smooth.
  • Preheat a grill to medium heat. Cut bread into 12 triangles and toast for 1 minute on each side until crispy. Arrange on plates. Place koftas on top. Cut tomatoes into wedges and roughly chop the remaining herbs. Sprinkle over the koftas. Drizzle with sauce and finish with a sprinkle of extra paprika before serving.
