Lamb and tabouli open wraps with roasted garlic hommus

Savor effortless lamb and tabouli wraps with flavorful roasted garlic hummus.
Ingredients:
  • 90g (1/2 cup) cracked wheat
  • 1 tomato, seeded, finely chopped
  • 1 cucumber, seeded, finely chopped
  • 1 avocado, finely chopped
  • 2 spring onions (shallots), thinly sliced
  • 250.00 ml chopped fresh continental parsley
  • 62.50 ml chopped fresh mint
  • 1 tsp Moroccan seasoning
  • 2 (about 400g) lamb boneless loin (backstraps)
  • 4 pieces Lebanese bread
  • 200g roasted garlic hommus
Instructions:
  • Cook the cracked wheat according to the package instructions. Drain the cooked cracked wheat and place it in a large bowl. Mix in the tomato, cucumber, avocado, spring onion, parsley, and mint. Gently combine the ingredients. Season with salt and pepper.
  • Preheat the grill on high. Mix half of the oil with Moroccan seasoning in a bowl. Coat the lamb with the mixture. Heat a large non-stick frying pan over medium-high heat and spray with oil. Cook the lamb for 2-3 minutes on each side for a medium doneness or until cooked as desired. Place the lamb on a plate and let it rest for 3 minutes before thinly slicing it.
  • Brush one side of the bread with a light drizzle of oil. Grill for 1 minute until golden. Spread with a quarter of the hommus, top with a quarter of the tabouli and lamb. Repeat with the remaining ingredients.
