Lamb biryani

Impress the family with quick and tasty lamb biryani featuring spiced mince and raita.
Ingredients:
20.00 gm butter or ghee
1brown onion, finely chopped
20.00 ml finely gratedginger
2garliccloves, crushed
1long green chilli, seeded, finely chopped (optional)
3.75 gm ground cumin
11/2 tsp ground coriander
1 tsp ground turmeric
500g Lamb Mince
400g basmati rice
750ml chicken stock
180g pea
2Lebanese cucumbers, peeled into ribbons
150g cashew
1Lebanese cucumber, coarsely grated
280g yoghurt
125.00 ml finely choppedmint
Instructions:
In a large saucepan over medium-high heat, melt the butter or ghee. Add the onion and cook while stirring for 5-7 minutes until the onion starts to brown. Stir in ginger, garlic, optional chili, cumin, coriander, and turmeric. Cook for 1 minute until fragrant. Add the lamb and cook while breaking up any lumps with a wooden spoon for about 5 minutes or until browned and fully cooked.
Combine rice with stock, bringing to a boil. Reduce heat and simmer covered for 12 mins until rice is tender. Add peas, cover, and let sit for 5 mins. Fluff with a fork before serving.
Place the cucumber on a paper towel, squeeze out excess liquid, then transfer to a bowl. Stir in the yoghurt and mint, and season to taste.
Place the rice mixture in a large serving bowl and garnish with cucumber. Serve alongside the raita and cashews.
