Lamb biryani

Ingredients:
36.40 gm light olive oil
1onion, halved, sliced
800g dicedlamb
2garliccloves, crushed
2 tsp gratedfresh ginger
5.00 gm ground cumin
11/2 tsp ground coriander
1/2 tsp turmeric
1/4 tsp chilli powder
185ml beef stock
Pinchsaffron
60ml coconut cream
80g cashew
40.00 ml choppedfresh coriander
Steamedwhite rice, to serve
Pappadums, to serve
Instructions:
In a large frying pan, heat the oil over medium heat. Sauté the onion until soft. Turn up the heat to high, add the lamb, and cook for 3-4 minutes, tossing occasionally, until browned.
Sauté the garlic, ginger, cumin, ground coriander, turmeric, and chili powder for 30 seconds. Pour in the stock and saffron, and bring to a boil. Reduce heat to medium and simmer for 5 minutes.
Simmer the coconut cream until the sauce thickens, then top with cashews and coriander. Serve alongside steamed rice and pappadums.
