Ingredients:
  • 36.40 gm light olive oil
  • 1 onion, halved, sliced
  • 800g diced lamb
  • 2 garlic cloves, crushed
  • 2 tsp grated fresh ginger
  • 5.00 gm ground cumin
  • 1 1/2 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp chilli powder
  • 185ml beef stock
  • Pinch saffron
  • 60ml coconut cream
  • 80g cashew
  • 40.00 ml chopped fresh coriander
  • Steamed white rice, to serve
  • Pappadums, to serve
Instructions:
  • In a large frying pan, heat the oil over medium heat. Sauté the onion until soft. Turn up the heat to high, add the lamb, and cook for 3-4 minutes, tossing occasionally, until browned.
  • Sauté the garlic, ginger, cumin, ground coriander, turmeric, and chili powder for 30 seconds. Pour in the stock and saffron, and bring to a boil. Reduce heat to medium and simmer for 5 minutes.
  • Simmer the coconut cream until the sauce thickens, then top with cashews and coriander. Serve alongside steamed rice and pappadums.
